Grapes are harvested from their respective vineyards and transported to our Riverview winery, where they are crushed into open-top stainless steel fermentation tanks and inoculated with a selection of yeast strains. The must is pumped over several times daily until dry, followed by an extended maceration of 2 to 5 days. After pressing off the skins, some wine is transferred to oak barrels for aging over 12 months before being blended with components matured in stainless steel. Finally, the wine is trucked to our Katikati winery for final blending and bottling.
